What’s a summer’s day without complaining about the sun and without feeling like you’re going to melt unless you get an icecream? – that second! And what better way to cool down than a delicious home-made Popsicle?
Popsicle recipes generally move around the same technique:
- mix everything in a blender until smooth
- add some extra sugar if you want
- then strain the mix with a fine sieve and push out as much liquid as you can
- then pour into Popsicle molds and freeze (overnight)
Ta-da!
You don’t even need Popsicle molds, you can use cupcake molds or yogurt containers. As for the “everything” part, here are some summery ideas you could try!
Watermelon Popsicle
Ingredients: watermelon, raspberries, sugar, a little lemon juice.
Strawberry and Basil Popsicle
The trick with this one is to use very little fresh basil (a few leaves), that you boil in a sugar syrup.
Ingredients: Strawberry, basil, sugar
Pineapple and Banana Popsicle
You’ll like this because it’s not overly sweet and because the banana gives it a creamy texture.
Ingredients: Pineapple (less), banana (more).
Blueberry and Yogurt Popsicle
Ingredients: Blueberry, strawberry yogurt, sugar (or syrup).
Coconut and Pineapple Popsicle
Ingredients: Pineapple, pineapple juice, coconut milk, some coconut flakes.
Cherry and Chocolate Popsicle
Just before getting your popsicle out of the freezer, melt some chocolate and then pour it around it while hot. The chocolate will freeze.
Ingredients: Cherries, chocolate flakes, yogurt.
Mango and Chile Popsicle
Ingredients: Mango, a dab of hot chile.
