Before we even got to say our proper goodbyes to summer, autumn has started to wave its leafy hands at us, making us think of pumpkin pies, sweaters and hot chocolate. Yet we are ready.

1. Thai-spiced Pumpkin Soup
Quick recipe: Soften the pumpkin in the oven for 45 min to 1 hour. When golden, add canned coconut milk, unsalted butter and a teaspoon of red Thai curry paste. Blend and salt to taste.
2. Shredded Brussels Sprouts & Apples
Quick recipe: Dice a crisp apple and dip in lemon juice. Saute two handfuls of diced tofu cheese. Add chopped garlic and maple syrup. Take the tofu out of the pan and throw in the shredded Brussels sprouts until cooked but not soft. Mix with the apple and tofu, add pine nuts.
3. Broccoli Crunch
Quick recipe: Bring salty water to boil as you would for pasta, then cook broccoli less than a minute and take out. Mix chopped garlic with almond butter, olive oil and lemon juice. Dice two apples, mix everything and serve quickly.
4. Pumpkin and Feta Muffins
Quick recipe: Golden and soften the pumpkin in the oven. If it’s soft, dice it first to help it brown faster. Mix the soft pumpkin with cooked spinach, sunflower seeds, Parmesan, diced feta cheese and some mustard. Separately, beat eggs and milk, then add the pumpkin mix to it. Add flour and mix carefully. Bake in cupcake tins.
5. Spice-kissed Pumpkin Pie
Quick recipe: Roast a medium sized pumpkin in the oven. When soft add half a cup (a full cup if you have a sweet tooth) brown sugar, then mix in freshly ground cinnamon, cloves and nutmeg. Add a teaspoon of ginger. Take a store bought pie crust, spread a thin layer of hazelnut paste, then pour the pumpkin mix on top. Bake until the crust is golden or starts to brown at around the edge.
What to drink – Turmeric Tea
Quick recipe: Mix dried turmeric with raw honey, some lemon and a pinch of pepper in a cup of hot but not boiling water, and voilà! You’ve got yourself a tasty, fall drink ( and it helps keep you warm too) !
